Vanilla and mascarpone Bavarois



Ingredients: (for 2 people, 10cm-diameter cake)

The biscuit
- 4 and 1/2 tablespoons all-purpose flour
- 4 tablespoons white sugar
- 1 egg
- 20 g de beurre
- 1 tablespoon milk

The mascarpone cream
- 1/2 cup mascarpone cheese
- 50 mL light cream
- 3 tablespoons white sugar
- Vanilla extract
- 1 teaspoon gelatine powder

Preheat your oven to 400 degrees F.

In a bowl, mix the egg yolk and the sugar until it becomes whiter and creamier.

In an other bowl, whisk the eggwhite until it looks like whipped cream. Add it to the last preparation. Mix everything very carefully, you must not break the white eggs preparation.



Put into the oven during 15 to 20 minutes.



Now cook the mascarpone cream: whip the mascarpone cheese with the light cream, the sugar, and one teaspoon vanilla extract. Add 2 tablespoons hot water and the gelatine powder. Mix until it becomes really creamy.

When the biscuit is ready and colder, cut a circle using a 10cm-diameter pastry circle.



Fill progressively up the circle with the mascarpone cream.



Decorate your bavarois. For example, heat 1/2 cup strawberry coulis. Add one teaspoon gelatine powder and mix everything. Fill up your circle with the coulis.



Put the circle in the fridge during at least 6 hours.

Christmas Chocolate Biscuits



Ingredients: (for ~20 cookies)
- 2 cups all-purpose flour
- 1 tablespoon cocoa
- 1 cup and 2 tablespoons (125 g) cold butter
- 3 tablespoons white sugar
- 2 tablespoons cold water
- 2 egg yolks

Preheat your oven to 400 degrees F.

Cut the butter into littles cubes. Mix the flour and the cocoa together. Add the butter. Mix the butter with the flour with your fingers, until the pastry looks crumbly.



Add the sugar, and the eggs.



Mix everything with a wooden spoon, until it forms a ball. If it does not form a ball, add a tablespoon water but if it is too sticky, add a bit flour.

Put the pastry in the fridge during at least 15 minutes.



Line normally by rolling out the pastry on a floured surface, and form your biscuits using christmas pastry cutters.



Put in the oven during approximately 15 minutes. Once colder, decorate your biscuits.

Little Salmon Croissants




Ingredients: (8 servings)
- 1/2 sheet puff pastry
- 25 g smoked salmon (approximately, 1 slice)
- 3 tablespoons heavy cream
- 1 egg yolk

Preheat your oven to 400 degrees F.

Cut the past into 8 triangles, and cut each bases of the triangles (as shown in the photo below).



Prepare the cream according to your taste: I put pepper and dill ("aneth"). Don't put salt, smoked salmon is already salty.

Brush the triangles with your cream, then, put little slices of your salmon.




Roll your triangle from its base to the top.





Brush your croissants with egg yolk.

Bake approximately 20 minutes into the oven.


Little Heart-Shaped Cinnamon Biscuit "Palmiers"



Ingredients: (10 servings)
- 1/2 sheet puff pastry, thawed
- 1 tablespoon milk
- 1 tablespoon white sugar
- 1 teaspoon cinnamon

Preheat the oven to 400 degrees F.

Cut the past into a rectangle. Brush with 1 tablespoon milk. Sprinkle with the sugar and cinnamon.




Starting at one long side, roll-up the past, stopping in the middle. Do the same thing with the other long side.

Cut your past into 3 inch slices.



Place them on baking sheets and flatten them out a little.

Put into the oven for approximately 10 minutes.

Mango, Banana & Lime Salad

Ingredients:
- 1 Mango
- 3 Bananas
- 3 tablespoons dark rum
- 10 tablespoons white sugar
- 1 lime

Cut the bananas into slices and dice the mango. Put the fruits in a bowl.

Mix the rum and the sugar in an other bowl.

Add the rum to the fruits.

Drizzle with lime juice.

Put the salad in your refrigerator.
